Care and seasoning: It arrives factory pre-seasoned and ready to cook. After each use, rinse with hot water, scrub off any stuck food, dry completely, and wipe on a thin coat of cooking oil. Skip the dishwasher and long soaks for the cast iron. The seasoning builds into a more nonstick surface the more you cook with it.
How it compares: It is smaller and lighter than a full-size Dutch oven but deeper than a standard skillet, which makes it a good fit for two- to four-person households. The lid gives you a second pan for eggs or sides.
